BADAMI CHICKEN CURRY (ALMOND CHICKEN CURRY)

Badami Chicken Curry, Almond Chicken Curry or Chicken Curry with Almonds as the name suggests is a rich chicken curry made along with almonds.

Meat
  • 1 kg Chicken
Produce
  • 2 Bay leaf
  • 2 Chilli, Green
  • 1 tsp Chilli, Red Powder
  • 1 tsp Coriander, Powder
  • 2 tsp Garlic
  • 2 tsp Ginger
  • 1 1/2 cup Onion
Refrigerated
  • 1/2 cup Curd
Baking & Spices
  • 2 Cardamom, Black
  • 1 inch Cinnamon
  • 2 Cloves
  • 2 tbsp Kasuri methi
  • 2 Peppercorn, Black
  • 1 Salt
  • 1/2 tsp Turmeric, powder

Instructions

  1. Heat vegetable oil and ghee in a pan.
  2. Once the oil is hot, add cloves, black peppercorn, cinnamon, black cardamom and bay leaf and let them crackle for a few seconds.
  3. Add onion and fry until slightly browned.
  4. Add ginger and garlic and fry for 2 minutes.
  5. Add chicken and cook on high heat for 4-5 minutes.
  6. Add curd and green chilli and cook for 2-3 minutes.
  7. Add turmeric powder, coriander powder, red chilli powder, salt and almond paste.
  8. Add milk and 1/2 cup water and cover and cook until chicken is done.
  9. Remove the lid and cook until the gravy is slightly thickened.
  10. Add fresh cream and kauri methi and mix well.
  11. Serve hot with naan.
